If you’ve ever wondered what makes them so special, a soft-shell crab is simply a blue crab caught just after shedding its hard outer shell. This natural molting process happens 20–25 times throughout a crab’s life as it grows—increasing its size by up to 30% each time! While they molt from late spring to early fall, May through September is the absolute prime season for these culinary delicacies.
